anime basics

Pretty much everything listed here is a great start in terms of films.

For series, just to add to what Gummy has already listed. Macross, Lupin the 3rd, Black Jack, Gatchaman, and Patlabor are all good to start off with to see what you like.

Also, they're somewhat hard to find on DVDs in the states, but Leiji Matsumoto's work like Captain Herlock and Space Battleship Yamato are fantastic.

Some US fandom favorites:

Neon Genesis Evangelion

Cowboy Bebop

Akira

Escaflowne

Excel Saga

Ghost in the Shell

Tenchi Muyo

Gundam Series

Ranma 1/2 (and other works by Rumiko Takahashi)

Some that haven't necessarily reached that status, but that I'd also recommend:

The Melancholy of Haruhi Suzumiya

Higurashi no Naku Koro ni

Almost anything by Gainax (FLCL, Kare Kano, and Gurren Lagann specifically)

Lucky Star and Kodomo no Jikan are okay but I certainly wouldn't consider them anime basics.

Seriously though, there is no anime that every otaku should watch. I say watch whatever the hell you want.

I would even make the argument that you should avoid the "basics" since they are all overplayed, overexposed, and they aren't going to live up to your lofty expectations of them. The best recommendation I can make is to pick something random that you haven't heard of before and watch that.

There's too many different styles of anime where it's hard to pick one that's essential. I would honestly recommend films over series to anyone who wants to "get into" anime too. Films are typically so much more well-done than a series.
